Recipe for Carrot and Mint Salad (Gajar aur Pudine ka Salad)

Ingredients: 2 large carrots 200 ml iced water 60 ml lemon juice 1 tbsp sugar 1/2 tsp salt 1 tbsp chopped fresh mint

Method:
Pare the carrots into thin strips. Combine them with iced water, lemon juice, sugar and salt. Cover and chill for 2 hours.Just before serving, drain carrots. Combine with mint, mix gently and serve.
