Recipe for Whole Baked Raan

Ingredients: 1 ? kg leg of lamb 3 onions roughly chopped 3 tbsp whole garlic cloves 2" sliced ginger1 tbsp black peppercornswater to cover Marinade3 tbsp hung yoghurt2 tbsp lemon juice1 tsp grated ginger2 tbsp coriander paste1 tbsp roasted, ground coriander1 tsp roasted, ground cumin 1 tsp chilli powder? tsp nutmeg powder4 tbsp oilMint chutney4 tbsp mint leaves2 tbsp chopped coriander4 green chillies1 tsp garlic paste 2 tsp sugar 3 tbsp lemon juicesalt

Method:
Place lamb in a large pan with the simmering ingredients. Cook for 30 minutes. Cool lamb with liquid. Score meat with a sharp knife. Combine marinade ingredients. Rub into meat. Set aside for 5 hours. Bake leg in a very hot oven at 220 degrees c for a further 30 minutes. Baste occasionally with oil. Serve with mint chutney and sliced tomato. Grind all ingredients together. Serve with meat.
