Recipe for Lamb Casserole

Ingredients: 4 tbsp oil 750 gm boneless lamb - cut into 2" cubes ? kg sliced onions 1 tsp garlic paste 1 tbsp flour 250 ml stock 250 ml beer 1 tsp vinegar ? tsp grated jaggery 1 tsp mustard powder 1 bay leaf 200 gm baby carrots 100 gm sliced celery stalks 1 tbsp chopped parsley

Method:
Heat oil in a large pan. Brown meat. Remove from pan. Add onions to same oil and fry until browned. After 5 minutes stir in garlic. Dust in flour. After 1 minute, pour in stock and beer. Bring to a simmer. Return meat to the pan. Add vinegar, jaggery, mustard powder, bay leaf, carrots and celery. Season. Cover tightly and cook on a gentle flame for 1 hour until meat is tender. Serve garnished with chopped parsley.
