Recipe for Crunchy Seviyan Chicken

Ingredients: 4 chicken breasts- skinned and sliced horizontallyMarinade2 tbsp lemon juice2 tsp garlic paste2 tsp oregano? tsp chilli powder1 tbsp oilFilling4 blanched spinach leaves4 tbsp crumbled pepper2 chopped green chillies2 tsp diced oniongrated rind 1 lemon2 tbsp chopped coriandersalt and pepperCoating2 tbsp flour2 eggs2 tsp oil2 tsp kasoori methi4 tbsp fine >seviyan

Method:
Combine all the marinade ingredients.Spoon over chicken and set aside for 2-3 hours.Place spinach leaves over one half of chicken piece.Mix the remaining filling ingredients and spoon over the spinach leaf.Fold over chicken to seal.Coat with flour followed by egg, methi and seviyan.Shallow fry for about 5 minutes on each side.Serve hot with a salad.
