Recipe for Pahadi Chicken

Ingredients: 1 chicken-cut into pieces1 cup mint leaves-broken1 cup coriander-broken1 tbsp green chillies-chopped or to taste1 tsp garlic paste1 tsp ginger paste1 1/2 tsp salt or to taste1 tsp powdered black pepper1 tsp garam masala2 tbsp oil1 tsp cumin seeds

Method:
Grind the mint, coriander leaves, garlic and ginger together. Prick the chicken pieces with a fork. Add the ground paste and leave to marinate for 3-4 hours or more. Heat the oil and add the cumin seeds. When they splutter add the chicken along with the marinade and stir fry over high heat. When the chicken looks opaque, lower the heat and cook uncovered, stirring off and on, till cooked through and fat separates. Serve hot.
