Recipe for Stir Fried Mushrooms

Ingredients: 200 gm mushrooms2 Bamboo shoots steamed and cut lengthwise1 piece pumpkin-cut lengthwise1 piece winter melon-cut lengthwiseChinese cabbagesalt to taste1 tsp corn starch1 tsp sugaroil for fryingwater1 tsp oyster sauce1 tsp soya sauceTo decorateRice NoodlesPrawn seeds (optional)

Stuff the bamboo shoot with the pumpkin. Do the same with the winter melon. Now, cut the stuffed pieces horizontally into 4 -5 portions To make the Rice noodle basket, press the rice noodle mesh between two steel bowls. Flash fry with the containers to make rice noodle bowlsHeat water in a wok on a high flame. Put the Chinese cabbage, salt, corn starch, sugar and some oil on top. Fry for 10 seconds. Drain the water and the Chinese cabbage is readyNow add mushrooms to hot oil. Add salt, corn starch, sugar, oyster sauce and soya sauce. Stir fry on high flame for 10- 15 secondsGarnish with prawn seeds (if desired) and serve in the rice noodle basket, decorated with the stuffed bamboo shoot and Chinese cabbage.
