Recipe for Mexican Baked Potatoes and Phalsa Cooler (Mexican Aloo Aur Phalse ka Sherbet)
Ingredients: 1/2 kg phalsa
200 gm sugar
350 ml water
Soda water
Ice cubes
Baked Mexican potatoes
4 large potatoes
1 tbsp oil
2 tsp salt
Large knob of butter
100 gm sweet corn kernels
1/2 diced capsicum/red bell pepper
1 tbsp diced cucumber
1/2 tsp chopped garlic
1/2 tsp chilli powder
Method:
Clean berries. Prepare sugar syrup with sugar and water. Boil for 5 minutes.Add the berries and allow it to steep overnight.blend and strain the mixture. Combine with soda and ice and serve.For Baked Potatoes, rub oil and salt over the potatoes. Bake in a hot oven for about an hour.Slit down the centre and press in the butter. Mix remaining ingredients together. Season well.Place spoonfuls in the centre of each potato.
