Recipe for Potato Discs (Aloo ki Baked Matthi)

Ingredients: 100 gm cold cooked mashed potato 100 gm butter 100 gm flour 1 tsp curry powder salt, black pepper 1 pinch chilli powder 2 tsp fennel seeds Egg glaze 1 beaten egg 1 tsp milk pinch salt

Method:
Combine the potato with the butter, flour and spices. Combine to form soft but not sticky dough. Knead lightly on a flour surfaced board until smooth. Wrap in butter paper and chill for 30 minutes. Roll out on a floured surface about 1/8" thick. Stamp out discs of the dough. Place on lightly oiled baking sheets and brush with egg glaze. Sprinkle the discs with fennel seeds. Place in a preheated oven, 180 degree centigrade until golden in colour. Remove from the oven and cool before storing.
