Recipe for Fruity Fish

Ingredients: 750 gm fish fillets2 tsp garlic pastejuice of 6 lemons2 tbsp flour2 tbsp besan25 gm buttera dash of rum2 tbsp chopped celery2 chopped tomatoes150 gm pineapple cubessalt and pepper to taste

Method:
Marinade the fish for 20 minutes in a mixture of lemon juice, garlic paste and salt. Combine the flour and besan and coat the fish in this mixture.Saut?a> the fish fillets in butter and flavour with rum before removing from pan.Place the remaining ingredients into the same pan including the remaining marinade. Cook over a moderate flame. Season, puree and pour on the fish. Garnish with raisins.
