Recipe for Poached Fish

Ingredients: 1 salmon (whole and cleaned) 250 ml fish stock/wine 1 lemon ? kg cooked prawns 2 sliced cucumbers ? kg tomatoes Tomato Filling150 gm hung yoghurt 2 tsp cheese spread 2 tsp chopped herbs ? tsp garlic paste salt and pepper to taste Prawn mayonnaise125 ml mayonnaise 100 gm cooked shrimps 1 tbsp reduced fish stock ? tsp paprika 1 tbsp cream salt and pepper to taste

Method:
Arrange the fish in a tin. Pour the stock and add lemons. Cover with foil and poach at 170 degrees c for 35-40 minutes. To prepare the tomato filling, combine all the ingredients and spoon into the tomatoes. Arrange the fish on a cool platter. Decorate with prawns, cucumber and tomatoes. Combine ingredients for the shrimp mayonnaise and serve with the fish.
