Recipe for Prawn with Pea Soup

Ingredients: 1 king prawn-deshelled and deveined1 cup fresh spinach3 tsp butterA pinch of pepperA pinch of saltA pinch of sugarOlive oil to shallow fry For the CompoteLemonGreen AppleSugar For Pea SoupGreen peasCreamButterSalt PepperSugar

Method:
For the Compote Boil lemon whole. Puree with the green apple, add a little sugar and reduce in a pan. For the Pea SoupBoil the green peas. Cool and puree. Season with a little butter, cream, salt, pepper and sugar. Marinate the prawn in a pinch of salt. In a pan, lightly saut?pinach with a little butter. Add the pepper, salt and sugar. In a separate pan, shallow fry the prawn till done. Place it in a serving dish along with the compote. Pour the pea soup on top and serve.
