Recipe for Prawns In Spiced Butter

Ingredients: 1 kg prawns - shelled and de-veined 3 tbsp lemon juice1 tbsp oil salt and pepper 2 tbsp butter ? tsp yellow mustard seeds 2 split green chillies2 tsp chopped garlic 1 ? tsp oregano 1 ? tsp paprika 100 ml fish stock (optional) 2 tbsp lemon juicehandful chopped garden herbs Melba Toast and Lime Chilli4 slices fresh bread 1 tbsp softened buttergrated rind 1 lime 1 green chilli - deseeded and chopped coarsely ground black pepper

Marinate the prawns for 30 minutes in lemon juice, oil and seasoning. Heat butter in a heavy pan. Toss in mustard seeds and chillies. After 15 seconds, stir prawns, garlic, oregano and paprika. Fry until coloured and cooked. Pour in stock, followed by lemon juice. Season. Serve garnished with fresh herbs. For the melba toast, remove crusts from the bread. Flatten slices with a rolling pin. Bake at 160 degrees c until crisp and golden. To prepare the butter, beat the butter, lime, chilli and pepper together. Serve with the melba toast.
