Recipe for Aubergine Salad (Baingan ka Salaad)

Ingredients: 250 gm long aubergines1 tbsp oil1 tbsp coarsely chopped garlic1 tomato - peeled, deseeded and diced 2 tbsp lime juice1 tsp grated jaggery 2 tbsp fish sauce1 hard boiled egg - chopped 2 onions - sliced into rings2 sliced green chillies coriander leaves to garnish For onion bread1 tsp browned onion paste 2 tbsp butter coarsely ground black pepper 1/2 tsp paprika6 slices of crisp bread sprinkling of crushed rock salt

Method:
Roast aubergines until tender. Peel away skin and slice.Heat oil, add garlic and allow it to color. Stir in tomatoes. Cook for 30 seconds. Set aside.Whisk together limejuice, jaggery and sauce for the dressing.To serve, arrange aubergines on a plate. Top with tomato, garlic, egg and onion rings. Drizzle with dressing. Garnish with chillies and coriander and serve with brown onion bread. For Onion BreadCombine the ingredients. Spread thinly over slices of bread. Finish with a sprinkling of rock salt. Serve with salad.
