Recipe for Carrot and Cashew Coleslaw (Gajar aur Kaju ka Salad)

Ingredients: 1 large grated carrot1 finely chopped onion 2 chopped celery sticks 250 gm grapes 250 gm lichees - peeled and stoned 1/2 cabbage - shredded 1 tbsp chopped parsley 4 tbsp sesame oil1/2 tsp poppy seeds1/4 tsp yellow mustard seeds 1 tbsp vinegar 1 tbsp apple juicesalt and pepper50 gm roasted cashew nuts chopped herbs to garnish

Method:
Combine fruit and vegetables. Stir in parsley. Heat oil. Add poppy and mustard seeds. Cool. Add vinegar and apple juice to oil. Mix and pour over coleslaw. Garnish with nuts and herbs. Serve cold.
