Recipe for Meat Curry With Orange Juice

Ingredients: ? kg - cut into 2" pieces 3-4 tbsp oil 200 ml yoghurt pared rind 1 orange/ sweet lime 1 tsp chilli powder ? tsp cumin powder ? tsp turmeric powder 2 tsp ginger strips 1 tsp coriander powder 350 ml orange juice 2 tbsp lemon juice Garnishonion rings sweet lime/ orange slices chopped herbsKarela250 gm karela ? tbsp fennel seeds - roasted and ground ? tbsp coriander powder ? tbsp raw mango powder ? tsp onion seeds ? tsp chilli powder ? tsp turmeric powder salt oil for frying

Heat oil in a heavy pan. Brown meat with yoghurt, rind and spices in the oil. Season. Add a little water to the pan to scrape up any sediment while browning. Add fruit juices to the pan. Cover and simmer until meat is tender and the liquid has dried. Garnish with onion rings, orange slices and herbs.For the karela with dry spices, lightly scrape the skin from the karela. Halve and rub in 1 tsp salt. Set aside for 15 minutes. Wash and blanche for 5 minutes in boiling water to soften them. Discard seeds and cut into small pieces about 1". Fry in hot oil until crisp. Drain. Take 2 tbsp of the same oil and reheat in a separate pan. Toss in onion seeds, followed by remaining spices. Add karela to the pan. Mix well and serve.
